Meat Ratio Options:

  • Traditional: 100% pork

  • Optional: 70% pork and 30% red meat for a fuller flavor

Seasoning Notes:

  • No MSG or anticaking agents.

  • If the seasoning cakes, just break it apart — freshness and quality are not affected.

Recommended Fat Content:

  • 20–25% fat (pork fat preferred for authentic flavor and tenderness).

Casings:

  • 32–35 mm hog casings for links.

  • Patties also make a great option for sandwiches or pasta toppings.

Additional Ingredients Needed (Customer Provided):

  • 4 cups of dry red wine (budget-friendly options are ideal).
