This rich and creamy sausage starts with coarse ground pork or wild game and is infused with chunks of Monterey Jack cheese and diced jalapeños. Flavored with paprika, garlic, onion, ginger, nutmeg, and a signature blend of spices, our Jalapeño & Jack Cheese Sausage brings the perfect kick to any meal. Great as links or patties.

This seasoning is made with No MSG or anticaking agents. If the seasoning does cake, just break it up; it’s not bad.

Recommended fat content:

20-25% fat of your choice, some like beef, some like pork fat.

Recommend casings:

For links 32-35 mm Hog casings or size of your choice.

Seasoning is pre-mixed and complete with my recipe. No additional dry ingredients needed.

Customer to provide:

  • 4- 26oz can Jalapeno, seeded if feel necessary, but do use the juice out of a couple cans.
  • 8 lbs. Jack Cheese

 

Makes Approximately 25 lbs.

Cube meat and mix in seasoning and cheese. Use juice from can Jalapeno’s for binder. Grind through grinder plate of your choice.

I prefer a course grind, but that’s a personal choice.
