A true Italian staple, our Hot Italian Sausage is bursting with bold flavor and a satisfying kick of heat. Crafted from coarse-ground pork or a pork/red meat blend, it’s seasoned with crushed red pepper, garlic, fennel, paprika, and a signature mix of Italian herbs and spices. Perfect for grilling, pasta dishes, pizzas, or served on a toasted roll with peppers and onions.

Meat Ratio Options:

  • Traditional: 100% pork

  • Optional: 70% pork and 30% red meat for a deeper, richer taste

Seasoning Notes:

  • No MSG or anticaking agents.

  • If seasoning cakes, simply break it apart — it remains fresh and flavorful.

Recommended Fat Content:

  • 20–25% fat (pork fat recommended for authentic flavor and juiciness).

Casings:

  • 32–35 mm hog casings for links.

  • Patties are also a great option for sandwiches or pizza toppings.

Additional Ingredients Needed (Customer Provided):

  • 4 cups of dry red wine (affordable table wine works best).

Yield:

  • Approximately 25 lbs.

Preparation Instructions:

  1. Cube meat and combine with seasoning.

  2. Pour wine over seasoned cubes and mix thoroughly as a binder.

  3. Grind through a plate size of your choice (medium grind is recommended for Hot Italian).

  4. Stuff into casings or form into patties.
