A Louisiana classic, our Andouille Sausage delivers a hearty, smoky flavor with just the right kick. Traditionally crafted from coarse-ground pork, it’s seasoned with garlic, onion, paprika, cayenne, black pepper, and a signature spice blend that brings out its bold Cajun character. Perfect for grilling, gumbo, jambalaya, or served with rice and beans.
Meat Ratio Options:

Traditional: 100% pork

Optional: 70% pork and 30% red meat for a richer profile
Seasoning Notes:

No MSG or anticaking agents.

If the seasoning cakes, just break it apart — quality is not affected.
Recommended Fat Content:

20–25% fat (pork fat preferred for authenticity).
Casings:

32–35 mm hog casings for traditional links.

Larger casings (38–40 mm) can be used for a heartier, chunkier Andouille.
Additional Ingredients Needed (Customer Provided):

4 cups of a dry red wine or beer (both work well as binders).
Yield:

Approximately 25 lbs.
Preparation Instructions:

Cube meat and mix thoroughly with seasoning.

Add wine or beer as a binder and incorporate into the mix.

Grind through a coarse plate (coarse grind is recommended for authentic Andouille).

Stuff into casings, then smoke low and slow until fully cooked and infused with flavor.
