Our Artisan Chicken Sausage is a leaner, flavorful choice that doesn’t compromise on taste. Featuring coarse ground chicken spiced with garlic, onion, paprika, cayenne, and a hint of lemon and Pinot Grigio white wine, this blend offers a bright, savory flavor that works beautifully on the grill or served plated.

This seasoning is made with No MSG or anticaking agents. If the seasoning does cake, just break it up; it’s not bad.

Recommended casings:

For links, use 32-35mm hog casings or size of your choice.

Seasoning is premixed and complete with my recipe. No other dry ingredients needed.

Customer to provide:

• 1- 750ml Pinot Grigio white wine
• 4-Lemons

Makes Approximately 25lbs.

Cube meat I prefer leg and thigh quarters and debone and leave skin but you could save time and buy ground chicken and mix in seasoning and wine just the same.

Use the wine as a binder and pour over seasoned cubed meat and squeeze the lemons in, carful of the seeds. Grind through grinder plate of your choice.

I prefer a course grind, but that’s a personal choice.
